Make Your Own: Scallops, Pasta and Goat Cheese



1/2 cup frozen spinach
1/2 lb pasta of choice
2 cloves of garlic, chopped
6-8 mushrooms, sliced
6-8 pieces of asparagus, chopped
1 cup frozen scallops
1/2 cup goat cheese
  1. Bring a large pot of water to a boil. Add pasta, and cook for 7 to 9 minutes.
  2. Melt 6 tablespoons of butter in a large skillet over medium heat. Mix in the spinach, asparagus, mushrooms, and garlic and cook for a couple of minutes until soft. Cook, stirring occasionally until asparagus is tender, about 5 minutes. Place the scallops in the pan, and cook briefly on each side until lightly browned and the center is cooked through, about 3 minutes per side. Remove from the heat when scallops are just finished.
  3. Once pasta is drained, stir in cheese, scallops, and vegetables along with the pasta and serve immediately. Add salt and pepper to taste.

oo this sounds delish!! think you can substitute the scallops if they're too pricey?

You can, though I bought them frozen and they weren't too much at all!!
